(Stephanie Maszak - Alicia's neighbor)
3 T Olive oil
1 med. zucchini (chopped)
4 scallions (chopped)
1 rotisserie chicken (shredded)
1 t. cumin
1 c. tomatillo salsa (I use mild with cilantro and green olives)
salt and pepper
juice of 1 lime
8 6inch tortillas (corn or flour - I use corn, Steph uses flour)
1 cup shredded Pepper Jack
1 cup shredded Cheddar
2-3 T cilantro (not needed if you use the salsa with cilantro)
1. Heat oil. Saute zucchini. Add scallions and shredded chicken. Sprinkle with cumin. Add salsa and heat through. Season with salt and pepper. Squeeze lime juice over top.
2. Brush tortilla with olive oil and bake to crispy
3. Top tortilla with chicken mixture and cheese. Return to oven to melt.
(Hint: Pepper Jack may be too much for the kids, so save that for yourself and put mexican blend on theirs)
