Oven Pancakes

Ingredients

  • 1/4 cup and 2 tablespoons white sugar
  • 3 T brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 8 eggs
  • 2 cups milk
  • 2 t. vanilla
  • 2 cups all-purpose flour

Directions

  1. Preheat oven to 425 degrees F (220 degrees C). In a small bowl, mix together sugar and cinnamon; set aside.
  2. Place butter in a 9 X 13 pan and heat in the oven until melted. In a blender or food processor, whip eggs,  milk, and vanilla. Pour in flour and beat until well combined. Pour batter into hot pan. Sprinkle on sugar and cinnamon.
  3. Bake in preheated oven for 20 to 25 minutes, or until puffed and golden. Serve warm.
