1 T olive oil
1 lb. ground turkey
1 med. onion (sliced)
1 red bell pepper (sliced)
1 clove garlic, minced
2 t. less-sodium soy sauce
1 small bunch fresh spinach, trimmed, rinsed and well drained
pizza crust of your choice
1 cup shredded part-skim mozzarella cheese
Heat oven to 400. Grease a 12-inch pizza pan. In a large skillet over medium-high heat, heat oil until hot. Crumble in turkey. Cook until turkey is no longer pink, drain. Remove turkey to a medium bowl; set aside. Add onion, red pepper, garlic and soy sauce to skillet. Cook and stir until vegetables are tender about 5 minutes. Add spinach leaves to skillet and cook until spinach is wilted; remove from heat. Pat pizza dough evenly in pizza pan. Sprinkle cheese over dough. Spread turkey and onion mixture over cheese. Bake until crust is browned, 15-20 minutes.
