Soft and Chewy Chocolate Peanut Butter Cookies

1 package (2 layer size) chocoate cake mix - I recommend "butter recipe chocolate"
4 oz cream cheese, softened
1/2 cup peanut butter
1 egg

Preheat oven to 375. Beat all ingredients in electric mixer on low speed for 2 min, then medium for 2 min.

Shape into 1 inch balls. Place on baking sheet. Dip bottom of glass in sugar and partially flatten a ball, Dip in sugar - flatten another ball... Then use the tines of a fork to make a criss cross pattern on each cookie.

Bake 7 to 8 min or till edges of cookie are set. Cool 2 min on baking sheets. Remove to wire racks.

Makes 3 dozen.
